Anthony was born in Pontiac, Michigan and relocated to Sevierville, Tennessee during his early childhood. Anthony attended Sevier County High School. While attending Sevier County, Anthony became captain of the band’s drum line and graduated valedictorian of his 2010 graduating class.
Anthony began his career at UT as a nursing student and during the first semester of clinical rotations came to the conclusion that a hospital was not the right fit for him. During this same semester Anthony began to assist his mother with eating healthier and incorporating more physical activity and stretching into her daily life. He watched as her back pain dissipated and was proud to see that she no longer needed her high blood pressure medications – her healthy lifestyle was her new medication. Seeing his mother transform gave Anthony the feeling that a career in the field of nutrition was the right choice for him.
Once in the nutrition major, Anthony became involved in UT’s Research on Eating and Activity for Community Health lab, became a Nutrition Education and Activity Training educator for the Knoxville Health Department, and began volunteering extensively with UT’s sports dietitian, Allison Maurer.
In the summer of 2014, Anthony immersed himself in the community when he worked on two local Tennessee farms and then concluded his summer interning with the St. Louis Ram’s chef/dietitian during the team’s seven week long training camp. Upon returning to campus in the fall, Anthony began working in the athletic dining facility as a line cook assisting the chef in preparing dinner for the football team.
Upon graduation from the University of Tennessee in May 2015, Anthony undertook the position of Seasonal Nutrition Intern for the St. Louis Rams. At the beginning of the 2015 season, the Rams' dietitian left the team. With the start of the season underway, it was decided to elevate Anthony as the lead to serve as interim team chef/nutritionist. Anthony proceeded to earn the Rams' Team Player of the Month award for November and was able to significantly decrease the projected season budget by using creative and innovative solutions.
During the 2016 offseason Anthony took advantage of the time to further develop his skills by enrolling in a culinary certificate program at Boston University (BU) that was founded by Juila Child and Jacques Pepin. Upon graduation from BU, Anthony returned with the Rams to Los Angeles and completed his dietetic internship and credentialing exam to become certified as a Registered Dietitian.
In April 2018, Anthony accepted a new position as the Executive Performance Nutrition Chef with the Utah Jazz Basketball Club of the NBA.
In his free time, you can usually find Anthony either in the kitchen or riding his road bicycle. Anthony enjoys trying new foods at restaurants, traveling, snowboarding, weight training, jazz, and spending time with his mother. Lastly, Anthony loves staying up-to-date with current research in the fields of nutrition and kinesiology.
